Knafe - Our family recipe revealed!

WHAT YOU'LL NEED:

1 pint half and half

1 pint heavy whipping cream

3/4 cup yellow semolina

1 tbsp sugar

8 oz ricotta cheese

1 cup shredded mozzarella cheese

1 tbsp orange blossom water

2 sticks butter (or butter flavor Crisco)

1 1/4 box shredded filo dough

Crushed pistachios for garnish (optional)

 

Atir (syrup):

2 cups sugar

1 cup water

1 tsp lemon juice

1 tsp orange blossom water

 

Mix half and half, whipping cream, and yellow semolina on high heat continuously stirring until it boils. Once boiled, turn off the heat, and mix in ricotta cheese, shredded mozzarella cheese, and orange blossom water.

Melt one stick of butter at the bottom of a large foil/glass tray, add half the shredded filo dough (shredding it as you go). Pour cheese filling on top avoiding sides. Top the remaining shredded filo dough, and finish with one stick butter melted, spreading evenly on top.

Atir (syrup):
Add sugar and water on med/high heat, stirring frequently until boils. Add lemon and orange blossom water, turn down to medium heat and let boil for 10 minutes for atir to thicken.
  
Bake 350 degrees for 35-45 minutes, or until golden brown. Top with atir (syrup) immediately after removed from oven and let sit for 20 minutes.

    How do you shred filo dough like that or does it come shredded? I’ve only seen filo sheets or cups sold in the stores, so curious.
