Ramadan Recipe Box: A Beef Ribs Iftar

What's cooking on Zeena Uncovered? In our home, sharing family recipes is one of the joys of celebrating Ramadan, and this Ramadan is no different! Today on the blog, we have an entire meal lined up - French onion soup, Beef ribs, and Mango lassi are on the menu -- a soulful, mouth watering Iftar that hits all the right spots.
Starter: Instant Pot French Onion Soup
What you’ll need:
3 tbsp unsalted butter
3 large yellow onions sliced 1/4” thick
2 cloves garlic
2 springs fresh thyme
1 bay leaf
6 cups beef broth or stock
3/4 tsp salt
1/2 tsp black pepper
8-12 slices small baguette
4 oz freshly grated Gruyère cheese (mix in a little shredded mozzarella)
Directions:
Turn on sauté setting medium. Add butter and onions, sweat for 10 minutes. Mix frequently
Add garlic, thyme, and bay leaf. Sweat for another 5 minutes
Add 2 tbsp of water and cover. Turn on pressure cook setting high for 5 minutes. Quick release
Add broth, salt and pepper. Cover and slow cook medium for at least 2 hours. The longer the better
Drizzle olive oil, salt and pepper on sliced bread. Bake 5-7 minutes on 375 until golden brown
Pour soup in ramekins leaving an inch at the top. Top with bread and shredded cheese. Broil on high for 5 minutes or until cheese melts
Serve
Main Course - Beef Ribs
What you’ll need:
6-8lbs Short ribs
2-4 tbsp olive oil
2 tbsp liquid smoke
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Cajun seasoning
2 tbsp dark brown sugar
1 tsp chili powder
1 tsp paprika
2 tsp oregano
2 tsp salt
Sweet Baby Rays BBQ sauce
Directions:
Place in a deep tray. Coat the ribs with the liquid smoke. Mix seasoning and Sweet Baby Rays BBQ sauce. Massage both sides of the ribs generously
Cover and slow bake on 250 for 5 hours
Serve with Sweet Baby Rays BBQ sauce
Sweet ending - Mango lassi
What you’ll need:
2 large ripe mangos
1/2 cup vanilla Greek yogurt
1 cup milk
1/4 banana
1/2 cup ice
1 tbsp simple syrup
Directions:
Blend all together until smooth
